Apam Karamel

i'm ever so chuffed today.. considering that i'm not that good at making kueh melayu but i just wanted to give it a try. since i've got the steamer out of the shed/store to make Steam Fish for  juadah iftar today, i might as well try making kueh apam, using the recipe from http://www.tiffinbiru.com/, and it worked!! rasanya belum tahu lagi until iftar in less than 4 hours. but who cares, janji apam tu nampak gebu and tak bantat.


Ingredients

2 eggs
1 cup sugar
3/4 cup water
1/2 cup cooking oil
2 tbsp margarine/butter
2 tbsp evaporated milk
1 tsp bicarb soda
1/2 tsp vanilla
1 1/2 cup plain flour

  1. masak gula pasir hingga jadi caramel, tuang air (carefully), kacau rata & masak hingga sebati. sejukkan
  2. put cooking oil, evaporated milk, egg, margarine into food processor and blitz to mix
  3. add caramel with bicarb soda & vanila and blitz again
  4. add flour and blitz till well mix. if its too watery, add 1/2 tbsp flour
  5. pour into moulds, steam for 15 minutes
  6. serve with grated coconut or in my case, dessicated coconut..
encik suami asked, why didnt you make the apam biasa?? haiyaaa... ni first time try buat kueh apam. now that dah menjadi, esok lusa boleh lah try the apam biasa or apam marble..lagipun the apam biasa tu kena letak yeast or yogurt which i dont have in the pantry.

by the way, this one not supposed to be merekah macam apam biasa tu okay..
