got the recipe from bbc goodfood magazine that i subscribed monthly since 2008. somehow i've not received any magazine since december; after informing them of my change of address..
ingredient
100g butter - block butter will do
175g caster sugar
75g brown or muscovado sugar
125h chocolate (plain or milk) - i prefer dark chocolate
1 tbsp golden syrup - can substitute with honey
2 eggs
1 tsp vanilla extract/essence
100g plain flour
1/2 tsp baking powder
2 tbsp cocoa powder
preparation
- heat oven to 180 deg C/fan 160 C/gas 4. grease & line 20cm cake tin
- place butter, caster sugar, brown sugar, chocolate and golden syrup/honey in a pan and melt gently on low heat until it is smooth and lump free
- remove pan from heat
- break eggs into bowl and whisk with fork until light and frothy
- add eggs, vanilla, flour, baking powder and cocoa powder to chocolate mixture and mix thoroughly
- put the mixture into greased and lined cake tin, place on middle shelf, bake for 25-30 minutes
- remove and allow to cool for 20-30 minutes before cutting into wedges
- serve with double cream or ice cream and plenty of fresh fruit
